Winemaker’s notes: From a single standout site in the hills west of Denmark, this is Chardonnay at the cool-climate frontier. Hand harvested, pressed straight to French oak (a mix of seasoned puncheons and new hogsheads), then wild fermented on full solids. It spent nine months on lees - unsulphured, untouched, and unstirred - before being naturally settled, racked and bottled without fining. This is about purity and restraint, letting site and season speak clearly through structure, savour and mineral tension. A wine for those who like their Chardonnay with both elegance and edge.

“It’s perky, juicy, textural, it’s a Chardonnay that will make you happy, no doubt. A melange of nuts, dried fruit and spicy tones. It’s a whiff of trail mix, sweet, savoury and salty. Cashews, toasted almonds, dried apple, some flint, a tropical note, later comes nutmeg and mint. Very nice.”
