Tasting notes: Classic Great Southern Riesling purity - lime blossom, young ginger, bushwalk florals - with gentle complexity of wild fermentation in old puncheons and 30 months ageing on fine lees in a cool cellar. The natural high acidity and minerality of this single site in Denmark brings a long line of refreshment to the palate, balanced by subtle beeswax/honeyed notes from time in oak and bottle.
Winemaker’s notes: Das Sakrifizz is produced only in years when particular barrels from the Das Sakrileg riesling programme show a line and finesse ideally suited for sparkling wine. The base wine is unfined and unfiltered and finishes ferment in bottle as per méthode ancestrale, a technique originating in 16th century France. As it is undisgorged, some small sediment remains in the bottle, which will protect the wine from oxidation as it continues to age and gain further complexity.
