Tasting notes: Bright, aromatic and quietly textural, this wine opens with lifted notes of nashi pear, white flowers and honeydew. The six days of skin contact lend a gentle grip and juicy succulence, while time in seasoned oak and on lees brings savoury depth and a subtle complexity to the finish. Delicate, layered and dangerously drinkable.
Winemaker’s notes: Favorita is the Piedmontese name for Vermentino - so FAV, obviously. This fruit comes from Swinney’s exceptional vineyard in Frankland River, where cool nights and warm days help the variety retain its freshness and perfume. Grapes were destemmed and chilled, then left on skins for six days before being pressed to seasoned French oak for wild fermentation. The wine rested undisturbed on lees for nine months before being racked and bottled with a touch of sulphur. No tricks, no additions - just time, texture and trust in the fruit.
