





Happy Nat
Vintage: 2024
Tasting notes: Fresh! Fresh! Fresh! Bursting with orchard aromas - think floral notes, green apple, and a zesty mandarin-yuzu vibe. A subtle blush from the Muscat skin contact adds extra appeal. The fizz is fine and gentle thanks to a long, slow wild ferment and time on lees, giving the palate lovely mouth-filling texture. Just a touch of residual sugar balances the natural acidity and phenolics, while the finish is bright, clean and mineral. Made for sunny afternoons, good company, and pure, easy-going pleasure.
Winemaker’s notes: Happy Nat started back in 2019 when Brisbane’s Happy Boy restaurant asked us to make them something small-batch and special. The idea? Great Southern Riesling with a cheeky little kick of Muscat. Edition number 7 keeps that same spirit alive - vibrant, aromatic, and seriously drinkable.
The Riesling is sourced from a site in the hills west of Mount Barker, picked early to lock in that crisp, natural acidity. Grapes get overnight skin contact for extra flavour before pressing to tank with no additions, allowing gentle oxidation for natural fining. That juice is then combined with lees from our Patio Nat to kick off fermentation.
It all ferments wild and slow over a couple of months, before going straight to bottle at just the right moment to trap the fizz. This 2025 release is undisgorged and well-behaved when opened - naturally cloudy, with light sediment and tartrate crystals left in the bottle as part of the honest package.
Unfined, unfiltered, and all about pure, happy drinking.
