Tasting notes: Nova Syrová is back after a three-year hiatus - and it’s as deliciously offbeat as ever. Think bright cherry and red berries up front, then a swirl of smoky stalks, forest floor and something herbal and wild in the background. It’s juicy, light on its feet, and drinks like a dream with a little chill on it.

There’s complexity here, sure - but mostly it’s just really fun to drink. Like your favourite vintage jumper: colourful, soft, and somehow pulling everything together in the most unexpected way.

Winemaker’s notes: This one only happens when the stars align. Nova Syrová is a mash-up of parcels that don’t usually belong together - but somehow, they just click. Whole bunch carbonic Syrah and Garnatxa (Grenache) were pressed off early and finished fermenting in old barriques. Whole bunch Pinot Noir stayed on skins to kick off wild ferment before being pressed off. Then we tossed in a splash of Monastrell and Schwarzriesling for good measure.

It’s a bit like trying to make Pelaverga without actually having Pelaverga. Why? Because we can. Or as Bevelation 21:5 says: “Ecce nova facio syrova.” (Behold, I make new Syrah.) No rules, just vibes - and the kind of red that rewards curiosity and drinks beautifully now.

“Super just pushes itself in front of nova. There’s lightness to this Syrova, it’s driven by sour-edged red fruit, green olive crunch, potpourri, bitter herbs, flint and wet leaves. This is a wine on a par with Pinot Noir. Ah! But there’s more to it. Depth, character. Light, sour, savoury, fragrant red. Not far from the Amaro family either. Fantastic combo of flavours in a lovely idiosyncratic expression. Super Nova Syrova.”
