





Zibbo Nat LD
Vintage: 2021
Tasting notes: Intensely aromatic and seriously fun. Expect heady muscat perfume with exotic tropical notes, balanced by fresh citrus, fine phenolic textures with lees-derived complexity and richness. The gentle haze in the glass comes with a fine, meringue-like mousse. It’s richly textured yet bright, walking the line between floral opulence and refreshing acidity. In other words: it’s zibbolicious, baby.
Winemaker’s notes: This is pét nat with ancient roots. Zibibbo (aka Muscat of Alexandria) traces its origins back to Egypt, made famous on the Sicilian island of Pantelleria for luscious dessert wines and raisins. But pick it early to keep that zippy acidity and it becomes perfect for fizz.
Our fruit comes from a tiny, low-yielding site east of Donnybrook in Geographe. Grapes spent several days on skins for added texture and aromatic punch before pressing off to tank and old barrels for a slow, wild eight-week ferment. A healthy pour of Riesling joined the blend to sharpen the acid line and bring citrus lift.
It all went to bottle unfined and unfiltered, trapping the last frothy sigh of fermentation. This 2021 spent a luxurious 48 months on lees before a late disgorge in April 2025, giving the wine extra depth, creamy mousse and a beautifully integrated complexity.
Naturally cloudy, lively and proudly wild. Pop a bottle and enjoy zibubbles.
